Actually, if you back to my original post you will realize you had the solution right from the beginning.  I think now you understand more what roles each device plays.

TI provides all the source code for configuring the the SensorTag.  Follow the link in the original post and download the BLE v1.3.  It is all there.

Also as I stated in the original post, the details on the addresses is not provided in any data sheet I could find.  The only thing you will be able to change is how often the data is read, not how often the gyro actually updates its reading.  So, for example, let's say you can go from a 1 second interval to a 0.2 second interval and the gyro only updates every second, then all 5 readings during a 1 second period will be the same. (*unconfirmed, you will have to verify that yourself I don't know what the update frequency of the gyro is, it isn't stated anywhere)

If you can find a data sheet that contains the address locations for the functions you want, then you can add them to the hal_gyro.c file.
